“Can you make bolognese,” I ask.
“If the sauce is on, I can make it,” she responds assuredly. If it’s not, then let her take you on her culinary quest, offering whatever she might have on the menu that night. As an American, I’m used to picking my favorite from countless choices, not just the best of what’s available. So letting chef tell me what to eat is a bit unsettling. But then again, she’s the pro and I’m the burger bro.
Seeing the lack of deals, I was also a bit concerned. “Not even a price fix or something? I’ve heard a lot about those lately,” I inquire.
“We can do that.”
I think I can get used to this flexibility.

We stumbled upon Via 45 during a walk around Red Bank and stopped for a desert. Such nice people. Went back with a party of 6 for dinner – excellent and accommodating. I am returning with another party of 6 next week – because we so enjoyed this place, I can’t wait to go again. So do try it …you won’t be sorry. Everything is prepared to order, so it’s a little wait, but absolutely worth it! It’s a BYO or you can order by phone to a local beverage carrier and they’ll deliver. Very well thought out and the food – all of us agreed – was YUMMY!
HORRIBLE SERVICE and the owners were extremely rude to the customers!! we had an 8:15 res and did not sit down until after 9! then when ready to place our order outside while still waiting fro our table inside, they told us there was no meat left at all- only some fish, chicken or pasta! we did order and did not get our food until after 10:00PM!! some ordered TROUT and RECIEVED SALMON!!! completely different fish! the chefs brought out the wrong food to several other tables as well, someone ordered a COWBOY SYEAK and got SHRIMP!! the chefs were not even appologetic, they were rude and yelling at the customers, they need to step back and listen to the customers, they were so busy yelling at everyone they need to be more concerned about turning the tables over and gettting the food out! they did not appologize once for the long wait or offer us a desert or coffee- NOTHING!! NEVER AGAIN WILL WE GO THERE OR SEND ANYONE THERE! NO ONE SHOULD THE OWNERS WERE EXTREMELY RUDE AND NO ONE SHOULD GIVE THERE MONEY TO A BUSINESS LIKE THIS!!!!
